Stuffed Squash & Cauliflower Mashed Potatoes

 

Ingredients:

2 acorn squash

1 head of cauliflower

1 cup quinoa

1 cup (purple) Kale

1 can white beans, rinsed

½ cup white onion, chopped

3 tbsp butter (or vegan butter)

2 tbsp chives, diced

 

Instructions:

Stuffed squash

1. Cut acorn squash in half and drizzle with avocado oil

2. Bake at 400 degrees for 20-25 minutes

3. Cook quinoa (bring 2 cups water to a boil, add 1 cup quinoa and simmer for 15-20 min) and sautee onions

4. Mix together quinoa, onions, and add kale and white beans

 

Cauliflower Mashed Potatoes

1. Cut head of cauliflower into smaller florets

2. Boil for 7-10 minutes

3. Blend with the butter, then mix in diced chives
