Cauliflower Fried "Rice"

Cauliflower Fried "Rice"



1 head of cauliflower (will make about 5-6 cups of chopped cauliflower)

2 eggs

1/2 cup white onion, chopped

1/2 cup carrots, diced

½ cup bak choy, chopped

¼ cup frozen edamame

1/4 cup green onions, chopped

2 cloves garlic

1/4 tsp basil

1/4 tsp crushed red pepper

Salt and Pepper

Soy sauce or Coconut aminos (soy- and gluten-free option with less sodium)

Optional: chicken, beef, shrimp




1. In a food processor, chop cauliflower until finely chopped

2. Heat pan with oil then add cauliflower and onions and cook on medium-high for about 5 minutes

3. Add in eggs, carrots, garlic, basil, crushed red peppers. Cook on medium for about 10 min, stirring occasionally

4. Add in green onions and salt/pepper

5. Serve with soy sauce or coconut aminos and enjoy! :)
