Buffalo Cauliflower “Wings”

Buffalo Cauliflower “Wings”

 

Ingredients:

1 head of cauliflower

½ cup cassava or coconut flour

½ cup coconut milk

¼ cup green onions, diced

2/3 cup buffalo sauce (or homemade, recipe below)

 

Instructions:

1. Cut cauliflower into smaller florets

2. Dip floret in coconut milk, then in flour

3. Bake at 450 degrees for 17-20 minutes

4. Toss in buffalo sauce and top with green onions

 

Buffalo sauce:

4 tbsp butter or ghee

1/3 cup hot sauce

1 tbsp coconut vinegar

1 tsp apple cider vinegar

1 tsp coconut aminos

¼ tsp honey

¼ tsp garlic powder

1/8 tsp of each: cayenne, onion powder, ginger, chili powder

Pinch of salt & pepper

Juice from ½ lime

 

Instructions:

1. In a bowl, mix together all ingredients

2. Place in sauce pan, bring to a boil, stir and then remove from heat
