Pumpkin Cookie Dough Truffles

 

Ingredients:

2/3 cup pumpkin puree

1/3 cup + 1 tbsp coconut flour 

1/4 cup natural SunButter 

3 tbsp maple syrup 

2 tbsp coconut sugar

3 tbsp coconut oil, melted 

1 tsp vanilla extract

3/4 tsp pumpkin pie spice

1/3 cup mini chocolate chips + ~1/3 cup more for dipping 

 

Instructions:

1. Mix together pumpkin puree, Sunbutter, maple syrup, coconut sugar, coconut oil, and vanilla extract until smooth

2. Add in the coconut flour and pumpkin pie spice and mix until no flour is visible. Then add in the chocolate chips. 

3. Refrigerate for 20-30 minutes to let the coconut flour soak in the liquid 

4. Roll dough into 18-20 balls and dip each one in melted chocolate. Sprinkle some pumpkin pie spice on top (if desired)

5. Freeze until the chocolate hardens & enjoy :) 

* I recommend keeping any leftovers in an airtight container in the freezer
