Healthier Almond Joys


1/2 cup chocolate chips

2 tsp coconut oil


Coconut layer:

1 3/4 cup unsweetened coconut flakes

3 tbsp coconut oil

3 tbsp maple syrup

1 tsp vanilla extract (optional)

18-24 almonds 


Top layer:

1/2 cup chocolate chips

2 tsp coconut oil

Sea salt (optional) 





1. Line a loaf/bread pan with parchment paper

2. Melt chocolate and coconut oil for base layer, then evenly spread it across bottom of pan. Freeze for 10-15 min (best if it mostly hardens but is not totally firm so that the coconut layer can attach to it better)

3. Blend coconut layer (besides almonds) until coconut flakes are very small pieces. Evenly spread across bottom layer.

4. Make 3 rows of almonds - 2 close together, then a little bit of space & 2 more close together. 9 bars = 18 almonds; 12 bars = 24 almonds 

5. Melt chocolate and coconut oil for top layer. Pour over top & tilt pan side to side so that it can spread evenly. Sprinkle with sea salt.

6. Freeze for about 30 min & enjoy ️


Best kept in an airtight container in the freezer
