No-Bake Red Velvet Truffles



1 cup almond flour

1/4 cup coconut cream 

1/4 cup coconut oil 

3 tbsp maple syrup

2 tbsp beet root powder

1 tbsp + 1 tsp cacao powder (also great with 2 tbsp cacao powder for a more chocolatey taste - color will be a dark magenta) 

1 tsp vanilla extract

Dash of salt


Chocolate Coating:

1 cup dark chocolate chips 

1 1/2 tbsp coconut oil

1-2 drops (CBD infused) MCT oil 



1. Combine dry ingredients (flour, beet root, cacao, salt) 

2. Combine wet ingredients (coconut cream, coconut oil, maple syrup, vanilla extract)

3. Add the dry ingredients into the wet and mix until smooth

4. Refrigerate for 30 minutes, then roll into 16-20 balls 

5. Melt chocolate with coconut and MCT oil, over low heat stirring frequently 

6. Using a fork, dip each ball into the chocolate and then place on a baking sheet or plate lined with parchment paper. 

7. Freeze for 15-20 minutes, or until chocolate hardens. Enjoy :) 


I keep mine in an airtight container in the freezer
