Snickerdoodle Balls



1 1/4 cup oat flour (if you don't have this, you can blend gluten-free oats until fine, flour-like)

2 tbsp coconut oil or ghee, melted

1 1/2 tbsp coconut milk

1/4 cup honey, melted 

1 tsp vanilla extract

1/4 tsp salt

1/2 tsp cinnamon 

Optional: 2 scoops collagen protein


Cinnamon Sugar Coating:

1 tbsp coconut sugar (or brown sugar)

1/2 tsp cinnamon



1. In a medium bowl, combine flour with cinnamon, salt and collagen protein (if using)

2. In a separate bowl, combine melted coconut oil and honey, coconut milk, and vanilla extract 

3. Mix the wet ingredients into the dry

4. Refrigerate for 20-30 minutes, or until dough has hardened slightly

5. Roll into 12-16 balls, then coat in cinnamon sugar mixture

6. Enjoy :) 


Any leftovers can be kept in an airtight container in the fridge.
