Cauliflower Parmesan Tots



2 cups cauliflower rice

1 medium russet potato 

1/2 cup shredded parmesan cheese

1/3 cup oat flour

Salt, pepper, garlic to taste 



1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper 

2. Microwave cauliflower rice for about 3 minutes, then microwave potato for ~5 minutes (or can cook cauliflower in pan & bake the potato)

3. Peel off skin of potato and using a fork, mash the potato in a bowl 

4.  Once cauliflower cools, use a cheese cloth or towel to squeeze out any excess liquid

5. Add cauliflower, parmesan, oat flour, and spice to the bowl with the mashed potato

6. Form mixture into ~25 tots. Bake for 20 minutes, flip, and then cook for 15 more minutes
