Tagalong Bars

 

Shortbread:

1/3 cup coconut flour

2 tbsp coconut oil, softened

2 tbsp ghee or butter (or can sub for more coconut oil)

1 tbsp maple syrup

  • Mix all ingredients together 

  • Line a glass 9 x 5 bread dish with parchment paper and evenly spread mix across the bottom

  • Bake at 350 degrees for 15-17 min, or until fully cooked and edges start to brown

  • Let cool, then add the PB layer

 

PB Layer

2/3 cup natural peanut butter 
1/3 cup oat flour (you can buy this, or blend gluten-free oats until flour-like)

2-3 tbsp maple syrup

Optional: one scoop collagen peptides

  • Thoroughly mix ingredients together 

  • Evenly spread PB layer over the shortbread

Chocolate

3/4 cup dark chocolate chips

1 tbsp ghee or coconut oil

  • Over low heat, melt ingredients and stir until smooth

  • Evenly spread mix over PB layer

  • Refrigerate for 15-20+ min, or until chocolate has hardened
