Mac and Cheese (gluten-free & can be dairy-free)

Mac and Cheese 

 

Ingredients:

½ cup cannellini beans (canned or home cooked)

¾ cup full-fat unsweetened coconut milk

¼ - ½ cup mozarella or vegan cheese

½ tsp turmeric

Salt & pepper to taste

Box of Banza chickpea shells, or favorite pasta 

 

Instructions:

1. Blend the cannellini beans, coconut milk, and spices until smooth

2. Cook pasta shells according to the box 

3. In a small saucepan, add the blended mixture + cheese and heat on medium-low for ~5 minutes (until desired warmth)

4. Once the pasta is done cooking, add it into the warm cheese and mix 

5. Serve by itself of with a side of broccoli
