Oatmeal Chocolate Chip PB Cookies

Oatmeal Chocolate Chip PB Cookies

 

Ingredients:

1/2 cup gluten-free rolled oats + 1/4 cup gf rolled oats (blended into powder)

3/4 cup peanut butter (no sugar added) 

1/4 cup maple syrup 

2 eggs

1 tsp pumpkin pie spice (or cinnamon) 

1/2 tsp baking soda

½ cup dark chocolate chips

Parchment paper

 

Instructions:

1. Blend 1/4 cup of the oats until very fine, flour-like

2. In a medium mixing bowl add the blended oats, regular oats, and all other ingredients

3. Mix together thoroughly and then refrigerate for 15-20 minutes

4. Preheat oven to 350 degrees 

5. Using a spoon, create 10-12+ round cookies (they will not be balls, but instead circles about 1/4-1/2 inch high) and place on a baking sheet with parchment paper 

6. Bake for 9-11 minutes, depending on size of the cookies 

7. Let cookies cool, then enjoy :) 

 

Keep the extra cookies in an air-tight container for up to a week
