Carrot Noodle Pad Thai


Total meal time: 15-20 minutes

Serves: depending on the size of the carrots, this recipe should serve 2-4 people 



6-8 large carrots (or Trader Joes has frozen spiralized carrots!)

1 cup shredded purple cabbage 

1 head of broccoli (~ 2 cups of florets)

½ cup crushed unsalted peanuts (I bought whole peanuts and crushed them myself)

¼ cup green onions, diced

½ cup coconut aminos

Juice of 1 lime
Optional: organic chicken



1. Steam broccoli florets - after water is boiling, place broccoli in steamer and cook for 4-5 minutes, or until tender

2. While broccoli is steaming, peel and spiralize the carrots 

3. Heat a large skillet with oil (I use avocado oil) and then cook spiralized carrots for 2-3 minutes, so they are just softened a little bit

4. Transfer carrots to a large bowl and mix with broccoli, cabbage & coconut aminos. 

5. Plate, then top with crushed peanuts, green onions, and lime juice :)
