Mediterranean Quinoa Salad

Total time: 20 minutes

Serving: 2-4 people



Romaine lettuce, chopped

½ cup quinoa, cooked

½ - 1 cup cucumbers, diced

½ - 1 cup cherry tomatoes, sliced in half

1 can diced olives

¼ cup feta

1. Cook quinoa according to bag, should result in 1 cup cooked quinoa

2. Plate chopped romaine lettuce with cooked quinoa, chopped veggies, feta, and hummus
