Sweet Potato “Rice” Burrito Bowl



3-4 medium sweet potatoes

1 can black beans, rinsed

1 white onion, sliced

1 green pepper, sliced

½ cup romaine lettuce, chopped

1 cup guacamole 

1 cup salsa

2 tbsp avocado oil



1. Peel sweet potatoes, and use a spiralizer to create “noodles”

2. Blend sweet potato noodles until rice-like

3. Cook “rice” on medium-high with avocado oil for 7-8 minutes

4. In a separate pan, sauté onions and green pepper

5. Plate sweet potato rice and top with romaine, veggies, black beans, salsa, & guacamole

Should make at least 3-4 burrito bowls
