Quinoa Buddha Bowl

 

Ingredients:

½ cup quinoa

1 avocado

2 medium sweet potatoes

1 can black beans, rinsed

1 bag plantain chips

2 small tomatoes, chopped

½ cup onions, chopped

Optional: ¼ cup cilantro, chopped

1 lime

 

Instructions:

1. Cook quinoa according to box

2. Dice sweet potatoes, and back at 400 degrees for 30 minutes, flipping halfway through

3. Dice tomatoes, onions and cilantro and toss together with juice from ½ lime

4. Plate everything together and squeeze lime juice over (if desired)

Should make at least 2-4 bowls
