Collard Wraps



1 head of collard greens

1 cup shredded carrots

1 red pepper, chopped

1 cup shredded purple cabbage

½ cup quinoa

Avocado Pesto (



1. Cook ½ cup quinoa according to box

2. Chop/shred vegetables (you can buy organic shredded carrots & cabbage at Trader Joes)

3. Cut off stems of collard greens and wash them

4. Spread avocado pesto on collard, then add rest of ingredients

5. Roll up and cut in half (can put in parchment paper if not eating right away)

Should make 4-6 wraps
