Quinoa Pad Thai

 

Ingredients:

1 cup quinoa 

1 red pepper, chopped in strips

3/4 cup shredded cabbage

3/4 cup carrots, diced

1/4 cup cilantro

1/4 cup green onions

1/4 cup peanuts

1 tbsp avocado oil 

 

Instructions:

1. Bring 2 cups of water to a boil, then add quinoa and simmer for 20-25 minutes, or until quinoa fully expands

2. Cook red pepper and carrots in a medium-high pan with avocado oil for 5-7 minutes, or until slightly tender 

3. Add cabbage and cook for 2-3 more minutes, then remove from heat 

4. Plate quinoa with vegetables, and sprinkle desired amount of cilantro, green onions and peanuts on top
