Healthy Thin Mints

 

Ingredients:

1/4 cup coconut flour 

3/4 cup almond flour 

1/2 cup coconut sugar

1/2 cup cacao powder

3/4 tsp baking soda

1/4 tsp salt

5 tbsp coconut oil, melted

1 tsp vanilla extract

1/4 cup apple sauce 

1 tsp peppermint extract (+ 2 tsp for chocolate coating) 

1/2 cup dark chocolate, melted

 

Instructions:

1. In a bowl, mix together flours, cacao powder, coconut sugar, baking soda, salt & set aside

2. In another bowl, mix together coconut oil, vanilla extract, apple sauce & peppermint extract

3. In a blender or food processor, blend the dry and wet ingredients until becomes dough-like 

4. Roll out and flatten between two pieces of parchment paper so that dough is only 1/4 inch thick

5. Chill in fridge for 45 minutes to an hour

6. Use 1 1/2" cook cutter (or a small glass) to make cookie coins

7. Bake at 375 degrees for 10-14 minutes, flipping half way through

8. Let cool and dip in mixture of melted chocolate and 2 tsp peppermint extract

9. Place cookies in freezer for about an hour before serving
