Chocolate PB Oat Bars

Chocolate PB oat bars



2 ripe bananas

2 1/2 cups gluten-free rolled oats

1/2 cup peanut butter 

* can sub for any nut butter

1/4 cup unsweetened coconut flakes - the very fine flakes work best (+ some to sprinkle on top, if desired)

2 tbsp chia seeds (+ some to sprinkle on top, if desired)

2 tbsp maple syrup

1/2 cup dark chocolate chips (+ 1/4 cup for chocolate on top, if desired)




1. Line an 9x9 baking pan with parchment paper and preheat oven to 350 degrees. A 9x13 pan will work as well, just don't spread the mixture all the way across the pan. 

2. In a bowl, mash the bananas thoroughly with a fork

3. Mix in oats, peanut butter, chia seeds, unsweetened coconut flakes, and maple syrup 

3. Once fully combined, mix in dark chocolate chips

4. Spread evenly across the bottom of the pan and bake for 20 minutes

5. Let cool. Cut, and top with melted chocolate, unsweetened coconut flakes and chia seeds
