Avocado Brownies

Avocado Brownies

 

Ingredients:

3 avocados

2 eggs

½ cup coconut flour

1/3 cup cacao powder + 1 tbsp

¼ cup dark chocolate chunks

6 tbsp maple syrup

3 tbsp coconut oil, melted

5 tbsp dark chocolate, melted

1 tsp baking soda

1 tsp vanilla extract

 

 

Instructions:

1. Blend together 2 avocados, 2 tbsp melted coconut oil, 4 tbsp maple syrup, 2 tbsp melted dark chocolate, baking soda and vanilla extract

2. Add 3 eggs and mix thoroughly

3. Add coconut flour, 1/3 cup cacao powder and mix until smooth

4. Mix in by hand dark chocolate chunks

5. Pour into greased (I used coconut oil spray) 8x11 pan and bake at 400 degrees for 12-15 minutes

6. Frosting: blend 1 avocado, 1 tbsp melted coconut oil, 2 tbsp maple syrup, 1 tbsp cacao powder and 3 tbsp melted dark chocolate

7. Let brownies cool a little, then spread frosting and sprinkle with walnuts
